Profile Basics???????

I have absolutely no idea what I'm doing or where to even start, I've looked through this forum and I'm still confused, can anyone give me some pointers on how to figure this all out?

That's a super open-ended question where it would be hard for anyone to help you, as we're not really sure what you're trying to do. The basics are that Gaia profiles can be customised using CSS together with a few features that are built into the profile editor. The system has a few quirks that are unique to Gaia, but you'd be mainly using CSS to customise your profile.

For a guide which covers some of the basics, this guide is pretty helpful for looking at the Current profile. My suggestion is to think about some simple goals about what you'd like to do like maybe changing the background or the text colour, and look into how to do those things as a first stop. For more help, you'd need to actually explain what you were hoping to do. If you're not sure exactly what you can do, you can look at the profiles of other users for ideas that you like. While it's not allowed to take graphics from another user without permission and it's generally considered bad form to take full profile code verbatim, you can get ideas for some designs and features that you like, and find out/ask about how to do those things.
