i made a frosting recipe and halfed it but it still made 3x as much as I needed.... I don't know if the recipe's author expects you to use it all or what

You've probably heard this but another simple trick is to swap oil for applesauce. Makes everything more moist though. Good for homemade cornbread recipes and cakes such.

Yes, it Delicious imo. Good for chili and budget meals like that.
2 cups cornmeal
1 cup unbleached all-purpose flour
2 teaspoon baking powder
1/3 cup canola oil
2 tablespoons maple syrup
2 cups milk
2 teaspoons apple cider vinegar
1/2 teaspoon salt

Preheat oven to 350, line a 9×13 baking pan with parchment paper or spray the bottom lightly with non-stick cooking spray.

That's the recipe in it's original form. You can use honey or sugar or agave nectar if you dont have maple syrup, it's pretty expensive.
You can swap out most of the oil in this one it works well.
