Chicken Pasta with Raspberry Vinaigrette

this was something I threw together one day using whatever I could find in the fridge

Ingredients

1 serving of cooked angel hair pasta
1 Tbsp chopped green onion
1 Tbsp goat cheese
1/2 grilled chicken breast (seasoned with only salt and pepper)
1 Tbsp black olives
1/8 cup raspberry vinaigrette

Directions

Throw ingredients together in a bowl. Mix well and enjoy.


Raspberry Vinaigrette

Ingredients

1 rounded Tbsp raspberry jam
2 tsp dijon or spicy mustard
2 Tbsp white wine vinegar
1/4 cup extra virgin olive oil
salt and freshly ground pepper

Directions

Whisk ingredients together and pour over pasta

I highly suggest experimenting with this. Throw whatever you have on hand that might taste delicious in this pasta. I tend to eyeball the amount of ingredients I put in the pasta, but I wanted to make sure you had some guidelines to follow. Adjust the amount of ingredients to suit your preferences. You can use a different type of noodle. I just happen to like angel hair.
