Normal Vs. Rock: ...This should be obvious. Tackling, punding, and bodyslamming boulders is really not that effective, now, is it?
Flying Vs. Rock: ...Ever try to PECK a rock? Yeah, thought so.
Rock Vs. Flying: Rock attacks are very 'solid' in nature, and many are projectile-based. Chucking a rock at most anything hurts it, but clip a flying creature hard enough, and it'll lose control--or get seriously injured.
Rock Vs. Ice: Rocks are more solid than ice is, and if a chuck of ice and a chunk of rock hit each other--well, the ice isn't gonna win.
Ground Vs. Rock: With attacks like Earthquake, Magnitude, and Fissure, it's not really that much of a surprise that ground moves are so effective.
Rock Vs. Ground: Conversely, dirt is often mashed rock, carbon, and other material. You're smacking dirt with a rock, so don't expect to get very far.
Rock Vs. Steel: Steel is inherently stronger than rock.
Fire Vs. Rock: ..Except when it comes time to take some heat. Obsidian, anybody? Many types of rock are tremendously heat resistant, especially the volcanic variety.
Water Vs. Rock: Water erodes rock most effectively, so this makes sense.
Grass Vs. Rock: And if roots can split concrete, this one makes sense too.
Rock Vs. Bug: Rock, bug, bug go splat. Buck, rock, bug... gets a big pain in whatever it tried to hit the rock with.
