Ingredients:
1 lb Italian Sausage (sliced)
1 Onion, chopped
2 cloves Garlic minced (Mom had a jar of minced garlic in the fridge, busted Momma... >.>)
1 teaspoon Olive Oil
2 cans (14 oz each) 25%-less-sodium chicken broth (I'd just used bouillon cubes to make 3.5 cups of broth. >>)
1 soup can water (14oz can would be 1.75 cups)
1 can Cannellini Beans, rinsed
1 can Stewed Tomatoes, undrained
1 cup rotini pasta, uncooked
1.5 cups baby spinach leaves
0.5 cup shredded mozzarella cheese
Cook sausage, onions, garlic, in the oil in a large saucepan for 10 minutes, stirring frequently
Add next four ingredients. Bring to a boil. Stir in pasta; cook 8 min or until tender. Remove from heat.
Stir in spinach; cover. Let stand 5 minutes. Top with cheese.
Think Mom put the cheese in after she served up the bowls though.
