For zelda it's pretty easy:
Majora's Mask
Twilight Pincess
Windwaker (Deserves it's own console iteration inter-quel placed between PH and ST... Right after a game where TP link goes to Termina!)

For mario games, it's a bit harder to sort them into a particular order.
The yoshi's Island pair and paper mario series were definate favorites with me, but the 3D titles are also awesome and do not dissapoint.

As for mario universe games without mario in the title. Luigi's Mansio is definately where it is at. And I'm hoping E3 holds a big reveal for that.

StarFox wii, Zelda Wii, Pikmin 3[wii], and Luigi's Mansion 2[Wii] are my big hopes.
