So last year I made these for someone on Valentine's Day. All in all, I was pretty proud of how they turned out, though there were a couple things that pissed me off about the execution...I'll get into that in a bit. But all things considered, these are really easy to make! And if you don't color them pink or draw on them, then they don't really have anything to do with Valentine's Day, so...make them anyway!
Equipment: - Muffin/cupcake tin (12 spaces is best) - Foil cupcake liners - Mixing bowl - Hand mixer - Oven - Small brush (as in for painting)
Ingredients: - 12 vanilla wafers - 16 ounces cream cheese (two blocks or small tubs) - ½ cup sugar - 1 teaspoon vanilla extract - 2 large eggs - Red food coloring
HERE IS WHAT YOU DO: 1) Put a foil liner in each of the spaces of the muffin tin and preheat the oven to 325.
2) In the mixing bowl, combine all of the ingredients aside from the eggs until mixture is well blended. Next, mix in the eggs, one at a time, making sure to mix well between each egg.
3) Add food coloring and blend until uniform in color. The exact quantity escapes me, but I'm pretty sure I just used the instructions on the package as a guide. Start with the lowest number of drops and work your way up since you can always add more and mix it again if it's not pink enough for you.
3) Fill each foil liner 3/4 full with batter.
4) Bake for 25 minutes, then allow to cool. When it's cool enough, use the brush to draw and color in hearts on top of each one with the food coloring. I used a cookie cutter to help since I suck artistically, but it's not specifically necessary.
5) Pop them in the fridge for a while and presto! You have what I showed you in the picture up there. Or something close to it. At least I hope you do.
If I were to make these again, I wouldn't draw the hearts on top of them. Why you ask? Because the original plan was to use something like this. Unfortunately, it didn't arrive in time to be used in the preparation. I have, however, used it since, and it really does turn them into little heart shaped mini-cheesecakes. So yeah. There you have it. I hope you enjoy them as much as everyone else seems to!
