Official Gardening Butcher's
Mashed Potato Sandwich
You will need:
Mashed potatoes, homemade or instant.
As many slices of any lunch meat you like.
As many slices of any cheese you like
1 Green bell pepper
1 Tomato or cherry tomatoes
1 Onion
2 Slices of your choice of bread
Garlic butter
1) If you haven't already, microwave your potatoes on HIGH for 1-2 minutes. Or, follow the directions on your instant potatoes packet.
2) Dice your onion, bell pepper, and tomato. 1/4 cup of each should be sufficient, it varies on how much potatoes you have and how much you want.
CAUTION! Ask an adult to dice the vegetables for you if you're not good with knives!
Hint: Frozen veggies are great for people that hate dicing and cutting. Follow the package's instructions if you are using frozen vegetables.
3) Warm up some garlic butter (or any butter) to add to the mix. For this, I used some leftover Papa John's garlic butter. If you don't have any, microwave 1 tablespoon of butter or margarine for 15-25 seconds.
4) Now that everything is prepared, mix a little of the garlic butter in with all of the diced vegetables into the potatoes. Add cheese and stir until all of the cheese melts.
5) Toast 2 slices of bread on your preferred setting. Or, if you have a toaster oven, put cheese and meat on one slice of bread and leave the other plain. Toast to your preferred setting.
6) Alright! The fun part! Add your cheese, meat, and spices as you like it (I used lemon pepper and some potato toppings from my local supermarket). Leave one slice of cheese or meat facing up. Spoon 2-3 spoonfuls of the potato mixture onto one slice of bread. Drizzle the remaining garlic butter onto the potatoes. Yes, it is supposed to be runny. Do not put too much, once you start eating it gets VERY messy! Put the other slice of bread on top.
7) Now you're ready to eat! For maximum computer desk eating efficiency, carefully cut the sandwich in half. Eat with one hand (Over a plate, it's messy) and compute with the other. Enjoy!
