So I'm working a special event at Smith's and I have to make this recipe and hand samples out to customers. Just thought I would share...
white meat from one slow roasted rotisserie chicken, de-boned and shredded
12 oz package of frozen steamable white (or brown) rice
14.5 oz can diced salsa style fire roasted tomatoes
1/2 tsp salt
1c frozen golden sweet corn
1c fancy shredded quesadilla cheese
16oz jar verde enchilada sauce
preheat oven to 450 degrees
spray pan with cooking spray
put all ingredients in a bowl and mix thoroughly
bake for 20 minutes or until bubbling
let stand for 5 minutes
serve in taco shells or warmed flour tortillas
