Fat Honey Cookies
YIELD: 4 dozen cookies
4 Cups unbleached white flour *
1 1/2 teaspoons salt
1 teaspoon baking soda
1 teaspoon baking powder
2 teaspoons ground cinnamon
2 teaspoons ground dried ginger
1/2 teaspoon ground cloves
1 cup unsalted butter
1 1/4 cups mild honey, such as clover
1/4 cup sugar
1 egg
Sift the flour with the salt, soda, baking powder, and spices, and set aside. Melt the butter over low heat with the honey and sugar in a sauce pan large enough to hold the complete recipe. Cool to lukewarm. Beat in the egg. Add the flour mixture in several additions, beating briefly. (If the dough is not easy to handle, chill it.)
Preheat the oven to 350°. Lightly grease baking sheets. Shape the cookies by rolling in your palms to 1 1/2 inch balls. Place the cookies on the baking sheets about 2 inches apart (One dozen fits well on a large baking sheet.) Bake 15 minutes, until lightly browned. Remove from the pans at once and transfer to racks to cool. Store in airtight tins.
* I used regular, all-purpose bleached flour and they turned out fine (:
