Chocolate Truffles

(I learned this in cooking class)

Ingredients:
2/3 cup of whipping cream
3 Tablespoons of unsalted butter
1 Tablespoon sugar
1 cup semi-sweet chocolate chips
Powdered sugar or cocoa powder

Directions:
1. In a medium-sized saucepan, combine the whipping cream, butter, and sugar. Cook and stir until butter is melted and mixture is very hot.
2. Remove from heat.
3. Stir in the semi-sweet chocolate chips until chocolate is melted, mixture is well blended, and smooth.
4. Transfer mixture to a chilled bowl.
5. Cover and chill at least one hour or until mixture is completely cool.
1 HOUR LATER...
6. Measure out a teaspoon-looking amount of chocolate and roll it into a ball using your hands.
7. Put balls onto baking sheet lined with parchment paper.
8. When all balls are formed, sprinkle them with either the cocoa or sugar.
9. Chill them in the fridge until ready to eat.

I like to make truffles a lot. They are especially good with dark chocolate. I tend to pour the cream mixture over a bowl of chocolate chips so they don't burn. I also prefer to use a mini cookie scoop or melon baller. They are really fun when coated in a layer of some other melted chocolate.

That sounds awesome! I haven't tried that before xD

Oh, it is also sometimes easier to make a double boiler sort of thing to melt the chocolate first to make it easier to mix. It works pretty well if you slowly heat the cream and fit a ceramic, glass, or metal bowl onto the top, like a lid. Put the chocolate chips into it and stir while they melt a bit. But not for too long, or you will not pay enough attention to the cream. Milk also works, too, but it's not as fluffy or delicious.

Oh, and I used Ande's mints once. It was a fun flavor.

It's ok if you don't wipe your hands all over your face or the counter or something like that.
