Also known as the Puerto Rican Omelet.

There are many variations of this recipe, some with cheese, some without, some with tomato sauce, some simple, some complex. This is my very own version of this recipe.


Ingredients :

- 2-3 Sweet Plantains (Yellow Plantains) Avoid plantains showing and greenness.

- 1lbs Beef

- 1/2 onion

- 6 eggs

- 1 cup shredded mild cheddar cheese or 4 slices American cheese.

- 1 can french-cut green beans

- 2 handfuls of spinach

- 1 garlic or 1 tbs garlic powder

- Salt and pepper to taste

- 1 tbs Sofrito*

- 1 tbs (or 1 packet) Sazon*

- cooking oil (Like Canola oil, not olive oil or any other strong flavored oil)

- OPTIONAL: 1/2 chopped green and red bell peppers

** Sofrito and sazon are standard Puerto Rican seasonings similar to pesto and a seasoned salt. Sofrito is a pesto-lke paste made with culantro (not to be confused with but similar to cilantro), onions, garlic, salt, and other things. Sazon includes cilantro flakes, garlic powder, ground cumin, salt and achiote powder.



Directions:


Peel the plantains and slice them thinly in a cutting board. Heat up a skillet with about 1/4 and inch of oil. When the oil is hot, gently fry the plantain slices until they are slightly brown and then set them on a plate to cool.

In another hot skillet, brown the beef and add the onions, peppers, salt, pepper, garlic, and sofrito. Add the spinach last and cover for a few minutes to help it wilt. If you see a lot of water in the skillet, drain it out and add a dash more salt.

While the beef is cooking, crack the 6 eggs into a big mixing bowl and add the sazon and beat together. Next, lightly grease a casserole or baking dish and layer the plantains evenly over the entire bottom. Save an surplus.

When the beef is done cooking and the spinach is wilted, Open and drain the green beans and place them gently on the egg mixture in an even layer. Dump the beef on the green beans and mix thoroughly until everything is coated in egg.

Pour eggy beef mixture onto the plantains and spread evenly. Top with cheese and garnish with surplus plantains.

Cook in the oven at 350 degrees for 10-15 minutes.
