I had a really nice salad for dinner:
Raw red onion, thinly sliced
Salad dressing (olive oil, seasoning, honey, lemon juice and mustard)
It's one of my favourite salads. The different vegetables that go in don't make much difference, but what it does need is the combination of
mozzerella + black olives + honey roasted nuts
and it really should have tomatoes. And some sort of leaf, of course. Rocket's my favourite, baby spinach is nice too emotion_c8
There's another thing which I like to add. I only remembered about it when I was writing that first list and, when I realised that I forgot to put it on my salad tonight, I did a huge gasp xd and said "I forgot to put the balsamic reduction on!"
I felt genuine panic rofl You see, I've eaten it all now and I know that it wasn't perfect, it was missing that ingredient and there's nothing I can do to rectify it.
The squirty balsamic vinegar reduction is up there with the nuts and olives, in terms of importance. Such a shame that I forgot about it emo
Anyway, once I had my way with that salad, I was a absolutely STUFFED to the point of nausea. People might think that a salad dinner is very healthy and not at all rich, but when you have an entire 125g ball of mozzerella in it like I did tonight redface and some nuts (honey roasted at that) it all becomes quite fatty. Maybe I should be less lenient with the amount of cheese I put in.....
