Ok, since its been almost two weeks since the class (because I’ve been sick), my memory is a little foggy. I will, however, try to recall the day’s events to the best of my ability. The class started when he broke us up into groups. Students (chiefly the students from our teacher’s class) were paired with professionals and we were assigned a series of recipes from the packet. We had to get the ingredients and I was exciting – at last we would be able to actually make something.
Unfortunately, that something was just the perishables. So with eggs in tow, we went into the main kitchen to watch Chef Ho make everything on the list. It was much more interactive than the previous day and so it was refreshing. I learned a lot, and his recipes were fairly simple (except everything was in grams).
After a while, it was time for lunch and so I stuffed my face because I was starving to death. After a lunch that seemed to have been less than an hour, it was time for our group to gather the things so he could make the item of food. I went with one of our group members to measure out the simple syrup we had to make for some sort of whipping cream thing.
After that, I sort of tuned out from the class. I was in a haze because I was starving again and my feet were killing me. I sat down on the cooler next to another student and began talking. Somehow the conversation led to stripper cakes and then things spiraled downhill from there. I think most of the students were delirious from the long, long day and we went into the back room where Chef Caldwell was busy putting the finishing touches on the chocolates.
After what seemed like a short time, it was time for everyone to go. Everyone shoveled chocolates onto their plates and wrapped it in plastic wrap. After a group photo opportunity, I left because my parents were waiting outside. They were playing with the store owner’s cat and wanted to take it home, but I told them that it belonged to someone.
