Ive added some more of my favourite recipes here. They are all based on classical thai or indian dishes but have been translated to fit the western kitchen with its taste and availability of ingredients. I think they are all pretty easy to make and dont take that long to prepare.
- Chicken Satay -
(2 people)
- 200g chicken breast in slices - wooden sticks (put in water for some minutes before use)
marinade - lemongrass - oil - coriander - soya - 2tbsp cumin - garlic 2 cloves - limejuice
peanut-sauce - 2 tbsp peanutbutter - 200 ml coconutcream - 1 tbsp fishsauce - 1tbsp currypaste - 1 tbsp brown sugar
Put the sliced chicken on the sticks. Chop the lemongrass and mix it with the oil, soya, garlic, cumin, coriander and lime. Put everything in a bowl and add the chickensticks to the marinade. Cover with plastic and put in the fridge for at least one hour. Time for the sauce. Put peanutbutter, cream, currypaste, fishsauce and sugar in a pot. Slowly add heat and stir til you get a smooth sauce.
Grill the chicken-sticks in the oven or over open fire about 3-5 minutes on each side. Ready to serve with the peanut-sauce.
- Meat spring rolls -
(30 pieces)
- minced porkmeat 500g - garlic - fresh chili (red) - finely chopped leek - finely chopped carrots - chopped mushrooms - ginger - coriander (fresh) - fishsauce - spring roll wrappers - oil to fry in
Add the herbs and the meat to a hot pan with oil in. When the meat is well done add the veggies - stir it all til its well mixed. Take of the heat and let cool down. Add a teaspoon of the meatmix to each spring roll wrappers and fold it like a letter. Quickly fry the rolls in 3cm deep oil. Serve with sweet-chilisauce.
- Spicy fiskcakes -
(3-4 people)
- white fishmeat 400g (no bones) - fishsauce - red currypaste - kaffirlimeleafs - 2 tbsp chopped fresh coriander - 1 egg - 1 tbsp brown sugar - salt - green beans
Mix fishmeat, fishsauce, currypaste, kaffirlimeleafs, coriander, egg, sugar and salt in a big bowl. Add chopped beans. Heat up some oil in a big pan. Carefully fry the fishcakes until they are nice and golden yellow. Can be eaten as they are with a sweet-chilisauce or as burgers between two white breads.
- Thai Burgers -
(4 burgers)
- 1 fresh red chili - garlic 2 cloves - 1 leek, chopped - mushrooms, chopped - limejuice - 500g minced porkmeat - salt & pepper - flour - mayonnaise - hambuger buns (preferably whole grain, its more healthy) - salad
Mix chili, garlic, leek in a food processor. Add the mushrooms and let it all mix til its finely minced. Add meat, salt and pepper. Divide the mix into 4 burger and just lightly roll them in some flour. Flat them with the palm of your hand. Fry some minutes on each side in a hot pan with some oil. Make sure they are done. Stir the limejuice with the mayonnaise and spread the limemayonnaise on the breads. Put a piece of salad on the bread and then a burger. Ready to eat!
- Green Chicken Curry -
(6 people)
- 6 chickenfilets - 1 can of coconutmilk - garlic 2 cloves, chopped - 2 tbsp fishsauce - 2 tbsp green currypaste - 1 aubergine (eggplant), chopped - 2 fresh green chilis - kaffirlimeleafs, choppe - salt & pepper - fresh coriander to serve - rise
Slice the chicken in small pieces. Add the coconutmilk to a hot pan and let it quickly boil. Add chicken, garlic, fishsauce and bring to boil again. Lower the heat on the pan slowly boil til the meat is almost done. Add currypaste, aubergine, chili and the limeleafs. Boil for some minutes. Serve with the rice and sprinkled coriander on top. If you dont want that much heat to the dish then remember to take away the seeds out of the chili before adding it to the curry.
- Naan Bread -
(6 breads)
- 7-8 dl flour (wheat) - 1,5 dl milk - 1,5 dl yoghurt (natural) - 1 egg - 2 tbsp oil - salt - 1 tbsp honey - 25g yeast
Add flour into a bowl and warm the milk to 37°C. Mix the other ingredients in another bowl and then add it to the flour. Then add the lukewarm milk and start to work into a dough. Put a blanket over the dough and let stand for 1½ hour. After the rest work the dough some more and divide it into 6 pieces. Make drop-shaped breads quite thin. Smoothen the breads with some water over it. Put them on a plate thats been rubbed with some oil and let rest again for 20 minutes. Bake the breads in 250°C oven for 2-3 minutes on each side until they have a nice color.
- Kofta (indian meatball-dish) -
(4-6 people)
- 1kilo minced lambmeat - 1 onion, chopped - 2 green chili, chopped - 1tbsp finely chopped ginger - 1 teaspoon cardamom - garlic 3 cloves - 1 egg - 80ml fresh breadcrumbs
sauce - 4 teaspoons oil - 1 onion - 1 green chili, chopped - ginger - garlic 1 clove - 1 teaspoon turmeric - 1 tbsp coriander-pwoder - 2 teaspoons cumin - 1 teaspoon chilpowder - 40ml vinegar - 4 dl water - 2 dl yoghurt - 3 dl coconutmilk (can be left out if wanted..)
Put the meat in a big bowl. Add onion, garlic, chili, ginger, cardamom, egg and crumbs. Add salt and pepper as wished. Mix thoroughly. Make tablespoon big balls of the mixture and put on a plate. Heat some oil in a big pan and add the balls. Make sure they get a nice color all over.
Then its time for the sauce. Heat some oil in a pan. Add onion, chili, ginger, garlic and turmeric. Fry on pretty low heat until the onion is soft. Add the coriander, cumin, chilipowder, vinegar, the meatballs and water. Softly stir until the balls are all covered with sauce. Let boil under lid for about 30 minutes. Mix the yoghurt with the coconutmilk and add to the pan. Boil for another 10 minutes then its ready to be served with either basmati-rice or cous-cous.
- Fried chicken with veggies -
(for two people)
- garlic (1 clove, chopped) - chili (1 finely chopped) - ginger (chopped) - chickenfillets (2 shredded) - carrot (1 chopped) - leek (½ finely chopped)
- oyster sauce - basmati rice
Fry the herbs for some seconds, add the chicken. Finally add the veggies when the chicken has turned sunny yellow. Let it all fry for some seconds. Serve with boiled basmati rice and oyster sauce. Delicious!
- Banana pancakes -
(about 36 small pancakes)
- 600ml flour - a pinch of salt - 4 egg, whipped - 2 big ripe bananas, mushed - 300ml coconutmilk - oil to fry in - limejuice and bananslices to serve
Put flour, salt, egg, mushed banana in a food processor and make a nice mixture of it. Let the mix rest for an hour in the fridge. After that whip the mix lightly again. Heat some oil in a small pan. Take a spoon and pour the mix into palm-big cakes in the pan. Fry them on both sides. Serve the pancakes with limejuice and bananaslices.
- Coconut Fried Bananas -
- 120ml wheat-flour - 2tbsp rice-flour - 1tbsp sugar - 1 egg - 160ml coconutmilk - corn-oil to fry in - 4 big bananas - cinnamon
Mix the flours and the sugar. Make a hole in the middle of it and add egg and coconutmilk. Whip it together to a smooth mix. Carefully add the egg and mix some more. Heat about 6cm of corn-oil in a big pan. It should be quite hot so be careful. Test the heat with adding a breadcrumb and watch it fry intensive. Cut the bananas in halfs, dip them in the mix and then carefully put them into the frying-pan. Fry them about 2-3minutes until they have a nice color. When done place them on a plate with some paper underneath to absorb most of the fat. Serve with sprinkled cinnamon and sugar over it. Vanilla-icecream is also really delicious with these bananas.
